Truth be told…I LOVE fajitas! I honestly just ordered them last weekend when I had lunch at our local Mexican restaurant. I brought the leftovers home to enjoy for another lunch and I still wanted more. So, when our local Walmart had packaged, fully cooked, frozen strips of chicken fajita meat on sale, I quickly ordered them for our grocery pick-up! I couldn’t wait to make chicken fajitas at home. Bonus: they were so easy, they created the perfect weeknight dinner!
Easy Chicken Fajitas Start With Fully Cooked Frozen Chicken Fajita Meat
Thank goodness for this helpful shortcut of fully prepared, seasoned and grilled, frozen chicken fajita meat that I found on sale at Walmart. Yes, on sale!! I’d never tried them before, but after this meal….I will definitely order them again. I simply took them out of the freezer and put them in the refrigerator in the morning. When it came time to make dinner, they were thawed perfectly enough to use.
The serving size stated 2 1/2 servings, so it was perfect for my husband and I for dinner, with a little extra leftover for my lunch tomorrow!

Growing And Freezing Your Own Garden Veggies Creates Frugal, Delicious And Easy Meals
Last Spring, I planted a garden that continued to produce well into the early part of Winter. I froze many bags of green pepper strips, diced green peppers and chopped onions. Their convenience made quick work of this fajita meal. Not to mention they were frugal and delicious additions. Basically, they added great flavors at almost no cost.
Here’s How I Made Quick And Easy Chicken Fajitas At Home…
Add a few tablespoons of olive oil to a pan along with a tablespoon of butter for additional flavor. Hindsight, a cast iron skillet would have been a better choice for this dinner. But I grabbed by trusty non-stick Blue Diamond* skillet before I realized I should have used the cast iron. Next time, I’ll choose the cast iron for those true authentic charred fajita flavors.

Add the frozen green pepper strips and the onions to the butter and olive oil and sauté until almost tender. Note: I did add salt, pepper and garlic powder to taste.
If you don’t have onions and peppers from your garden, you can always purchase these convenient frozen chopped peppers and onions that are ready to use and save you a lot of time, effort and tears! Since they’re only $2.40…that’s a great price for saving time and energy! Note: prices may vary in your state and town.

After the veggies are cooked, time to add the meat…
Push the peppers and onions to the outside of the pan and then add the pre-cooked strips of chicken fajita meat. They’re so pretty with the fire grilled markings and seasonings, plus their convenient deliciousness made this meal a breeze!
Stir the chicken fajita meat around with the peppers and onions to distribute the flavors.
I chose to break up the strips of fajita meat into smaller pieces to make it easy for my husband to eat. His M.S. often causes choking problems for him, so this made both our lives easier. And, it actually seemed to stretch the portions a bit.
Time to assemble the chicken fajitas…Warm the tortillas first!
You don’t have to warm the tortillas this way, but I find that it helps create the best and most authentic restaurant style fajitas. They are pliable and easier to use. Besides, there’s nothing like the taste and feel of a nice soft, warm tortilla about to be filled with goodness! It really takes little time or effort, so I highly recommend it. All you have to do is wrap the number of tortillas you would like to use in a little foil packet and place them into a warm oven until ready to use. Note: I prefer to spray the foil with a non-stick spray just so they don’t stick.
Delicious side note: If you have any leftover warm tortillas, spread them with butter and add a sprinkle of salt and or a drizzle of hot sauce-roll up and enjoy!
OR, spread with butter and sprinkle with cinnamon and sugar-roll up and enjoy for dessert! Pure and simple deliciousness!
Open the foil packet and place 2 warm tortillas onto a plate.
Fold one side the tortillas upward, kind of back to back and add the sautéed peppers, onions and chicken fajita meat along the center of each warm tortilla.
Time to add the toppings…
I added some nice shredded colby and jack cheeses along with a dollop of sour cream. I also drizzled on a packet of mild Taco Bell sauce, but forgot to take a photo of that addition. It added extra color and flavor.
Note: You could also add fresh salsa, pico de gallo, avocado, guacamole, cilantro, or a squeeze of fresh lemon or lime if you would like.
