Eggnog Coconut Bars-Delicious and Easy Dessert For a Crowd.

Oh gracious, I love these eggnog coconut bars! They’re super delicious, so easy to make and the perfect dessert for a crowd. Just mix the ingredients in a blender. Pour the mixture into a 9×13 casserole dish and bake. Let cool for a bit, cut into bars and serve. You can even make them a day ahead.

Ssshhh, I’m going to let you in on a little secret. I often hope we have eggnog leftover after the holidays, just so I can make these treats. Using leftover eggnog makes them frugal and delicious!

Eggnog Coconut Bars Recipe

Yield: 32 Bars

Ingredients

  • 3 Cups Prepared Eggnog-carton style
  • 2 1/4 Cups Coconut Flakes
  • 1 1/4 Cup Granulated Sugar
  • 3/4 Cup All-Purpose Flour
  • 5 Eggs
  • 9 Tablespoons Butter
  • 2 teaspoons Vanilla
  • 1/4 teaspoon Ground Nutmeg + 1/2 teaspoon Ground Nutmeg

Instructions

  1. Preheat oven to 350 degrees.
  2. Apply non-stick spray to a 9×13 casserole dish.
  3. Put the eggnog, coconut flakes, sugar, flour, eggs, butter, vanilla and 1/4 teaspoon of nutmeg in a blender.
  4. Pulse the blender a few times.
  5. Then blend ingredients until well combined.
  6. Scrape sides if necessary and re-blend.
  7. Pour into greased casserole dish.
  8. Sprinkle remaining 1/2 teaspoon nutmeg all over the top of the mixture.
  9. Put in preheated oven and bake for approximately 45 minutes. The middle should be set. Use a knife to test for doneness if necessary.
  10. Remove from the oven.
  11. The mixture will be puffed-up at first and then deflate. This is ok.
  12. Cool to room temperature.
  13. Cut and serve warm. Or refrigerate until chilled, then cut and serve.
