Health benefits of apple butter
Apple butter contains good fiber from the apple peels, a bit of protein and far less fat then butter. Thankfully I had a bunch of apples on hand to make this easy low fat tasty spread. I’m recovering from emergency gallbladder surgery, so low fat and easy are important right now. This homemade apple butter became a delicious spread on my whole wheat toast for the past few mornings.

Easy Instant Pot Apple Butter
Since, I’m supposed to be “taking it easy” while recovering from surgery, I needed an easy preparation for apple butter. Ahhhh HA…my trusty instant pot to the rescue! The perfect time for a set it and forget it recipe. I’ve never made apple butter in my instant pot before, so I searched for a recipe and found this one would suit my taste. It’s an extremely easy recipe and it’s super delicious. I highly recommend it!
Recipe notes and adjustments
I didn’t have any apple cider to add to this recipe and I didn’t want to use plain water, so I added cranberry juice instead. The tartness and the color were an additional benefit to the finished product. I did notice this recipe may be a bit strong on cloves for some tastes. So, reduce the amount of cloves if you’d like.
Easy Peasy Apple Squeezy
The process to make this apple butter is easy peasy apple squeezy, using an instant pot and an immersion blender. The instant pot achieves that all day cooked flavor in just 15 minutes. And the immersion blender whirls it all up into a smooth and fabulous texture in no time at all. You would think I slaved all day, when I actually set it and took a nap. I woke up and blended it all together. Taa Daaah…DONE!!
Shortage of Canning Jars
There is a huge shortage of canning jars due to the pandemic and the excessive number of people canning this year. I called every store possible trying to find any canning jars. With no luck and quite a few laughs from store associates, I had to come up with a plan B. Plastic freezer containers are very reasonably priced and easy to use. I found these at Dollar General. They can’t be used with the boiling water canning method. But, they work great to store homemade products short term in the refrigerator and longer term in the freezer. They were perfect for my apple butter. And best of all, they were only $2.00 for the 6 pack! Go get yourself some apples and containers to make this apple butter tout suite! You’ll be glad you did!
