Do you love butterscotch walnut cookies? Well, if you do…here’s a super easy way to make those delicious cookies using a cake mix.
Normally, I prefer cookies made from scratch. But every now and then, my sweet toothed hubby wants cookies “tout suite” (that’s my polite way of him requesting something NOW)!
I saw a recipe for these floating around social media sites, so I thought I’d try them. I’m pleased to report…they were pretty good in a commercial sort of way. I spruced them up a bit, to add more homemade flavor.
Secret Ingredient…
OK folks, wanna know one of my secret baking ingredients? It’s this Mexican Vanilla!! My sister got me hooked on it when she took me to the Mercado in San Antonio many years ago. I brought home a bottle and have been using it ever since. I have a deal with my husband…when I’m running low on vanilla, I tell him…no more sweet treats once this vanilla is gone. Next thing I know…a package is at the door replenishing my supply!! One bottle grew to 2 bottles and now he’s buying it by the gallon!! LOL, true story!!! I am obsessed with this vanilla!!
Trust me folks, you need to get some for yourself. I’m not paid by them….yet….but I should be, because I’m always recommending this product!
The Butterscotch Walnut Cookie Recipe…
Here’s the basic recipe with a few delicious twists I added….
Butterscotch Walnut Cookies From a Cake Mix
- 1 Box Yellow Cake Mix
- 1 stick (1/2 cup) butter-melted
- 2 eggs-slightly beaten
- 1 tsp. Vanilla Extract (I prefer Mexican Vanilla)
- 1 Cup of Butterscotch Chips
- 1/2 Cup Chopped Walnuts
- In a bowl, add the cake mix with the melted butter, eggs and vanilla.
- Stir until combined.
- Add the butterscotch chips and walnuts-stir to combine
- Use a cookie scoop to form cookie dough balls
- Place dough balls on a parchment lined cookie sheet
- Put in a preheated 350° oven and bake for 10-12 minutes-turning pan after 5 min.
- Test for doneness by pressing gently on the middle of a cookie-it should leave only a slight indentation
- Remove a bit early from the oven, as the cookies will continue to bake on the cookie sheet for at least 2 more minutes.
- Serve cookies warm or at room temperature
- Store remaining cookies in a zip top bag or a sealed plastic container
My husband LOVED these cookies!! Besides the sweet and nutty deliciousness these cookies exude, I love them because they are so easy and allow me time to do other things…like sit with my feet up, relax with a cup of tea, a couple of these cookies and a good book*!
You just have to try them…trust me, you’ll be glad you did!
