How To Make Quick And Easy French Onion Soup

Truth be told…I love French Onion Soup! This quick and easy version of French Onion Soup hit the spot when I needed it most! All that flavorful onion goodness surrounding toasted bread and lots of ooey, gooey, cheesiness. Oh lordy, someone stop me before I drool all over my laptop.

On a cold damp day recently, I was feeling a bit under the weather (recovering from a cold and still recovering from a fractured femur). I was craving a bowl of French Onion Soup, but I didn’t want/nor did I have the ability to do all the work and make it from scratch. So I ordered a package of onion soup mix and shredded mozzarella cheese from Dollar General via Door Dash and created a quick and easy version of French Onion Soup deliciousness! I’m so excited to share how I did it!

The Quick and Easy Part Starts With a Soup Mix

Let’s Make Some Quick and Easy Delicious Soup

Ingredients for Quick and Easy Onion Soup

  • 1 envelope Lipton® Onion Soup Mix
  • 3 1/2 Cups Water or Beef Stock or Veggie Stock
  • 1/2 Cup Wine, of choice (can also use beer)
  • 1 TBsp. Butter
  • 1/2 – 1 tsp. Dried or Fresh Thyme-to taste
  • Handful Homemade Croutons (from my previous blog post-link below)
  • Handful Shredded Mozzarella Cheese
  • Dash Worcestershire Sauce-optional
  • Bay Leaf-optional if simmering for a length of time

Instructions

  • In a saucepan, add water and wine. Bring to a boil.
  • Add package of onion soup mix
  • Add butter, thyme and worcestershire sauce, if you’d like
  • Allow to boil briefly and then reduce to a simmer for 10 minutes.
  • If simmering longer, add a little bay leaf for extra flavor
  • Add croutons to a bowl
  • Ladle soup over the croutons
  • Sprinkle with shredded mozzarella cheese
  • Allow cheese to melt and enjoy!

Note: If you’d like to use a soup crock and place the cheese topped soup under a broiler to slightly melt and brown the cheese, feel free to do so. Just be careful with removal from the oven.
