This quick and easy no bake coconut cream pie was created out of a serious craving for a coconut cream pie and the need to make it fast and with ease while I continue to recover from a fractured femur.
The reason for the quick and easy…
I have to limit my standing to 10 minute intervals, so I knew I had to work quick. I also needed easy to use ingredients that would allow me to whip up the final product with ease.
Well folks, I’m happy to report I created an amazingly delicious no bake coconut cream pie that was both quick and easy! And I’m also thrilled to report, that I received most of the ingredients from Dollar General via Door Dash! So that made my life a whole lot easier! And for those (like me) that are concerned with costs…the ingredients for this pie totaled around $10.00!! Totally worth every penny!!
Recipe for Quick and Easy Coconut Cream Pie
Crust
- Premade graham cracker pie crust
Filling
- Two 3.4 oz Boxes Instant Vanilla Pudding Mix
- One 14 oz Can Sweetened Condensed Milk
-  2 Cups Whole Milk
- 1 teaspoon Coconut Extract or Vanilla Extract
- 1 Cup Sweetened Flaked Coconut
- 1/2 Tub Frozen Whipped Cream-thawed
Topping
- Remaining 1/2 Tub of Whipped Cream-thawed
- Toasted Coconut Flakes (optional)
Directions
- In a mixing bowl, whisk together instant pudding mix, sweetened condensed milk, whole milk, and coconut extract or vanilla extract until completely smooth.
- Fold the 1/2 tub of whipped cream into the coconut cream filling.
- Stir the coconut flakes into the cream mixture.
- Spread the coconut cream filling mixture into the graham cracker pie crust and smooth.
- Use the remaining whipped cream and spread it on top of the coconut cream filling.
- Sprinkle with toasted coconut flakes.Â
- Cover and place in the refrigerator for 2 hours.
- Cut, Serve and Enjoy!
Yield: 8 Servings
Bonus: One bowl and a whisk along with a spatula for easy clean-up and no fuss!

Note: I did not toast the coconut sprinkled on the top due to my inability to stand any longer. But I would definitely recommend toasting the coconut for more flavor and a prettier appearance.

Coconut Cream Pie Enjoyment…
Well folks, before I disappear to the comfort of my recliner with this towering slice of fluffy deliciousness…I wanted to add a few helpful hints.
A few delicious helpful hints…
This was incredibly delicious the first day…though it did not have a lot of coconut flavor with just the vanilla pudding and vanilla extract with the coconut flakes. Not that I minded, because I thoroughly enjoyed it. Though by the next day, the flavors melded and there was more subtle coconut flavor. If you prefer a stronger coconut flavor…then definitely use coconut extract and/or coconut pudding when you make it.
While sharing this recipe with a friend (Thanks Christie) prior to publishing this blog, we were brainstorming even more delicious options like…
- Using one vanilla pudding mix and one coconut pudding mix.
- Using chocolate pudding mix instead of vanilla or coconut pudding mix with the coconut flakes.
- Making chocolate pudding instead of vanilla or coconut pudding and then sprinkling sliced almonds on the whipped cream with the coconut flakes, for an almond joy candy bar flavor.
- Adding pecans and drizzles of caramel or a layer of caramel for a turtle candy effect.
- And finally…drizzling the regular coconut cream pie with chocolate and caramel for a Samoa cookie flavor.
- Using a chocolate cookie crust or a crushed nut crust vs the graham cracker crust.
The flavor combinations and possibilities are many and all would be super delish!!
