Crustless Spinach, Onion & Swiss Cheese Quiche

This recipe is quick and easy because you don't have to make or parbake a crust, because it's crustless!

Ingredients

  • 1 Cup Frozen Spinach-thawed & pressed to remove liquid
  • 1 Can Evaporated Milk
  • 6 Large Eggs
  • 2 TBsp Flour
  • 1 TBsp Dried Minced Onions
  • 1 Pinch Nutmeg
  • 1 Shake Garlic Powder
  • 1/4 - 1/2 tsp Dried Dill
  • Salt & Pepper To Taste
  • 4 Slices Swiss Cheese-chopped into small pieces

Instructions

  • Be sure frozen spinach is thawed, pressed and drained of water

  • To a mixing bowl, add the evaporated milk and eggs. Use a whisk to blend together
  • Add flour, dried minced onions, garlic powder, nutmeg, dried dill, salt and pepper. Whisk to fully combine.

  • Stir or whisk drained spinach into egg mixture

  • Stack slices of Swiss cheese, cut into strips and then cut the strips into pieces

  • Stir or whisk Swiss cheese pieces into the egg mixture

  • Spray pie plate with non-stick spray

  • Pour egg mixture into prepared pie plate

  • Bake in preheated 350 degree oven for 45-55 minutes

  • Test for doneness by inserting a knife. If it removes clean, then the quiche is done. If not, bake for another 5 minutes and test again.

  • Quiche will be puffy like a soufflĂ© when it comes out of the oven

  • Allow to set and settle for a few minutes before cutting and serving
  • Serve warm and enjoy
