Top with fresh cilantro leaves, chopped chives, chopped green onions, a squeeze of lime, sliced avocado, a sprinkle of cheddar cheese and/or a dollop of sour cream. I have also used jarred salsa or leftover pico de gallo instead of canned tomatoes. Whatever your preference is. This is always quick, easy and delicious!
This is so versatile...you can add fresh or frozen and thawed colored peppers, onions and corn to the liquid before cooking, or canned black beans. Or stir in cooked and diced chicken, or cooked ground beef. For extra spice...add jalapenos or a few shakes of hot sauce.
