This crustless quiche is easy and incredibly delicious! No need to make a crust, so you can whip it up in almost no time at all. Just mix all the ingredients together, pour it into a greased pie plate and bake! Then cut, serve and enjoy!
I love quiche for breakfast, lunch or brunch. And sometimes dinner. It provides a great source of protein and other nutritional ingredients. And if you’re a vegetarian, this is a great meal for you as well.
Let’s Make A Crustless Quiche!
For this recipe, I am adding spinach, onion and swiss cheese. So, I affectionately call it the SOS quiche…for Spinach, Onion and Swiss! And here’s how to make it…
Remove the frozen spinach from the freezer, measure out what you need and allow it to thaw. You can also microwave for 1-2 minutes to speed up the process. Then be sure to press it (forcing out all the liquid) and then drain the liquid from the spinach. This is important for the overall consistency of the quiche.
Using a whisk in a mixing bowl, combine the ingredients (except for the spinach and swiss cheese) and blend well.
Frugal and delicious crustless quiche ingredients
Many quiche recipes use heavy cream, which can be expensive. I much prefer this recipe that uses evaporated milk. It costs less, is shelf stable and is always readily available in my pantry. It’s one of my favorite cooking and baking frugal ingredients. Plus, my quiches always come out perfect and delicious when I use evaporated milk!
Add a little extra flavor to the spinach, onion and swiss quiche
I always add a bit of nutmeg to quiches. It gives them a subtle but extra depth of flavor that is very pleasing. A little bit goes a long way.
When I was creating this recipe, I didn’t plan to add dill. But, I felt it needed a bit more flavor. So, I added some dill that I grew in my garden, harvested and dried in my dehydrator. Home grown and dried dill has so much flavor-way more than store bought and it’s much cheaper. Since I grew the dill in such quantity, it’s basically a free and frugal ingredient! It definitely was the perfect flavor addition, because dill and spinach just go well together.
For convenience sake, I used slices of Swiss cheese in this recipe. Just stack the slices together, cut them in half, stack them again, cut the stack into strips and then cut the strips into pieces. Quick and easy.
After the cheese is cut into pieces, add them to the egg mixture and whisk or stir to combine.
Cleanup is a whole lot easier, if you grease the pie plate with a bit of nonstick spray before adding the egg mixture into the pie plate.
Carefully pour the egg mixture into the greased pie plate, making sure to scrape out any remnants of ingredients remaining in the bowl (like bits of cheese or spinach).
Time to bake the crustless quiche
Once the mixture is in the greased pie plate, carefully transfer it to a preheated 350 degree oven and bake for 45-55 minutes. Check at the 45 minute mark for doneness by using a table knife inserted halfway between the center and outer edge. The knife should be clean when removed. If egg residue is still on the knife, bake for another 5 minutes and test again.
Remove the quiche from the oven. It will be puffy…almost like a soufflĂ©. Allow it to rest a bit and settle. It will deflate and that’s ok.
Look at that puffiness! So light and fluffy and sooooo delicious!
Cut, serve and enjoy this super easy, light and flavorful quiche.
Oh my gracious, look at that quiche! Those pockets of swiss cheese just oozing out! A total yum fest for sure!!
In frugal and delicious conclusion…
I realize the price of eggs are a bit high right now, but for those of us fortunate enough to have chickens and a supply of delicious fresh eggs, this dish is a bit more frugal. Plus, if you garden (like me)…you may also have a supply of herbs or vegetables to make dishes like this. I can only encourage you in these times of need to try and be a little more self-sustaining in as many ways as possible. The extra work is often a stress reliever and is always rewarding.

Crustless Spinach, Onion & Swiss Cheese Quiche
Ingredients
- 1 Cup Frozen Spinach-thawed & pressed to remove liquid
- 1 Can Evaporated Milk
- 6 Large Eggs
- 2 TBsp Flour
- 1 TBsp Dried Minced Onions
- 1 Pinch Nutmeg
- 1 Shake Garlic Powder
- 1/4 – 1/2 tsp Dried Dill
- Salt & Pepper To Taste
- 4 Slices Swiss Cheese-chopped into small pieces
Instructions
- Be sure frozen spinach is thawed, pressed and drained of water
- To a mixing bowl, add the evaporated milk and eggs. Use a whisk to blend together
- Add flour, dried minced onions, garlic powder, nutmeg, dried dill, salt and pepper. Whisk to fully combine.
- Stir or whisk drained spinach into egg mixture
- Stack slices of Swiss cheese, cut into strips and then cut the strips into pieces
- Stir or whisk Swiss cheese pieces into the egg mixture
- Spray pie plate with non-stick spray
- Pour egg mixture into prepared pie plate
- Bake in preheated 350 degree oven for 45-55 minutes
- Test for doneness by inserting a knife. If it removes clean, then the quiche is done. If not, bake for another 5 minutes and test again.
- Quiche will be puffy like a soufflé when it comes out of the oven
- Allow to set and settle for a few minutes before cutting and serving
- Serve warm and enjoy
- Serve with fresh fruit or a little garden salad or enjoy it all by itself
