How To Make Quick and Easy Mexican Rice

This Mexican rice makes the perfect quick and easy side dish to accompany those easy, frugal and delicious chicken fajitas I posted earlier. Together, they create a fabulously flavorful weeknight meal with little time and even less fuss.

Let’s make some delicious Mexican rice

In a microwave safe bowl, combine the ingredients as shown below

Quick and easy Mexican rice starts with canned diced tomatoes and green chiles
Spoon the green chiles into the bowl with the canned diced tomatoes
Add dried minced onions to the tomatoes and green chiles
Add minced garlic to the tomatoes, green chiles and dried onions
Place the butter into the bowl and then shake on salt and pepper to taste. Stir to combine
Instant rice is a key ingredient when making quick and easy Mexican rice.
Measure the instant rice and add to the bowl of other ingredients

I had just finished making an amazing batch of vegetable stock, so it was the perfect addition to the rice instead of water. It added so much flavor and healthy ingredients from all the vegetable scraps that created such a flavorful stock. Plus it added the perfect frugal and delicious elements that make me so happy!

Pour in the vegetable or chicken stock onto the rice and other ingredients in the bowl

Add ground cumin to all the ingredients and stir to combine

Cooking this Mexican rice in the microwave makes it fast and easy

After stirring to combine all the ingredients, cover the bowl with plastic wrap and put into the microwave. Set the time to cook for 5 minutes. Carefully remove the bowl from the microwave and use care to remove the plastic wrap to avoid steam burns. Fluff the rice with a fork to combine. Test for the doneness of the rice. If it is still a bit crunchy, cover and return to the microwave and cook for an additional 2 minutes. Remove, fluff and test again.

Remove from the microwave and fluff with a fork. Test for doneness.

Serve up that deliciousness!

This flavorful side dish is super easy to make and the perfect accompaniment to any Mexican themed meal. A no fuss, one bowl of deliciousness that is versatile as well.

Equipment

  • 1 Microwave safe bowl-medium size
  • Microwave

Ingredients

  • 1 Cup Diced tomatoes in their own liquid
  • 1/2 Small Can Diced Green Chiles
  • 1-2 Tbsp Dried Minced Onions-to taste
  • 1-2 Tbsp Minced Garlic-to taste
  • 1 Tbsp Butter
  • Salt and Pepper-to taste
  • 1-2 tsp Ground Cumin-to taste
  • 1 1/2 Cups Instant Rice
  • 1 1/2 Cups Vegetable Stock or Chicken Stock

Instructions

  • In a microwave safe bowl, add the tomatoes, green chiles, minced onions, minced garlic, butter, salt, and pepper

  • Stir well to combine

  • Add rice and stock
    Stir again to fully combine

  • Add ground cumin and stir to combine. This really adds the depth of Mexican flavor needed for this dish

  • Place in microwave and cook for 5 minutes (cover bowl with plastic wrap if you would like). Just be careful of the steam release when opening later
  • Carefully remove from microwave and fluff with a fork

  • If the rice isn't fully cooked, place back into the microwave and cook for an additional 2 minutes
  • Remove and fluff again
  • Serve alongside your favorite Mexican foods or enjoy by itself

  • Top with fresh cilantro leaves, chopped chives, chopped green onions, a squeeze of lime, sliced avocado, a sprinkle of cheddar cheese and/or a dollop of sour cream. I have also used jarred salsa or leftover pico de gallo instead of canned tomatoes. Whatever your preference is. This is always quick, easy and delicious!

  • This is so versatile…you can add fresh or frozen and thawed colored peppers, onions and corn to the liquid before cooking, or canned black beans. Or stir in cooked and diced chicken, or cooked ground beef.
    For extra spice…add jalapenos or a few shakes of hot sauce.
